The Noble Way
We celebrate a natural, chemical-free approach to caring for our honeybees- just as nature intended. Our honey is raw, unprocessed, and harvested in small quantities, leaving enough for the bees. With a few hives placed on rooftops and community gardens in Chicago, owner and head beekeeper Kyle Gati manages the hives as a hobby.

How did you start beekeeping?
Honeybees have always fascinated me. I am particularly intrigued by the fact that they are the only insects that produce food (honey). Being an avid gardener, keeping bees is simply a natural extension of my hobby. I never thought it would be possible, however, to keep bees in an urban environment like Chicago until I came across an article online about an urban rooftop beekeeper in New York City. From there I did some research and found there were many beekeepers on rooftops and in community gardens in urban cities all over the world. After attending an Intro to Beekeeping class through a local beekeeping organization I ordered my first package of bees and officially became a beekeeper and Noble Honey was born.

Why keep honeybees in the city?
Some people say bees in urban areas actually are better off than those in rural areas. Urban bees experience lower exposure to pesticides and often encounter more diverse sources of pollen and nectar, which they convert to honey. Chicago offers quaint, tree-lined streets, gardens, parks, alleys and abandoned city lots with many sources of pollen and nectar, including wildflowers many would consider weeds.
